ANZAC BISCUITS
I have had several requests for my Anzac biscuit recipe so here it is. It is a family recipe that has been handed down so I don’t really know who originally owned it.
All I can say is that when I make them, they are lucky to last 2 days, my children love them, so does my brother, parents, aunts…..
So without further ado, here is the recipe
Ingredients
125g butter
1 tablespoon golden syrup
1 teaspoon bicarbonate of soda
2 tablespoons boiling water
1 cup of rolled oats
1 cup desiccated coconut
1 cup plain flour
1 cup of sugar
Method
Melt butter and golden syrup in a large saucepan over a low heat.
Mix the bicarbonate of soda with the boiling water.
Add to the melted butter.
Combine dry ingredients in a mixing bowl.
Pour melted butter mixture into the centre.
Mix to a moist but firm consistency.
Drop teaspoonfuls of the mixture on to cold greased baking trays.
Bake in a slow oven, 150 degrees Celsius, for 20 minutes or until brown.
Cool a few minutes on the baking trays before removing to a wire cooling tray.

Oh if you have a fan-forced oven keep an eye on them as mine cooked in 5 minutes. If you use more butter the biscuits will end up not as crispy. Let me know how they go
Sorry the measurements are in metric and the ingredients are Australian but I didn’t have time to convert them.
